I just made 4 spinach pies for 4 woulderful friends that have just welcomed their newborns. They are perfect for freezing or eating right away.
Spinach Pie: Makes 2 (halve for one Pie )
Prep time 20 minutes
– Large container of ricotta cheese 32oz
– One block/container of fetta 12oz
– 1-2 eggs (optional)
– 5 10oz bricks of frozen spinach, thaw and remove liquid.
– 2x pie crust (2 per packet), shallow dish
– 1- 1.5 large Onions
– Butter or coconut oil for frying onions
– Spices (garlic salt, lemon pepper, thyme, others to your liking)
* Add tofu or meat if you like
Method:
– Thaw spinach on stove or microwave, remove most of the liquid.
– Fry onions until golden brown, add spices
– Crumble feta
– Mix all ingredients in a bowl thoroughly.
– Place mixture in pie crust until bulging (2/3 of an inch). Use 2nd pie crust as a lid. Press top and sides down to join and make a rough seal (crust may break a little, just go with it)
– Bake in oven at 350 for 45min or until golden brown and hot all the way through.
